Well I dont know lookin at the series Starks are really the only faction using round shields  Lannister have more oval shields. and Baratheon has kite shields. Could be Im wrong I havent read past the 2nd book

The book says nothing.However,in my imagination,Starks and Tullys had Norman Kite Shields,Baratheons/Lannisters/Tyrells/Arryns had Knightly Heaters,Greyjoys,Martells and Targaryens had round shields.
