No you don't understand, it's simply not feasible unless the patch is backwards compatible.

They have said some patches will not be save game compatible, but they will do their very best to make them so when they can, so yes it likely will happen, but hopefully it wont be so bad. Also, you will most likely be able to just continue your save, just without the added things in the patch, so if the patch maybe only adds a few minor things, then consider if you have to make a new save. On the positive side, new saves will allowed you to experiment, where as in warband i was stuck with the choices of my first char for over 300 hours. still dont know why i took those two points op in throwing on my bow using char

You can prevent game's update as long as you want. This is the only way.
