In my experience playing the game, I could never get trade caravans to work. Either they would be taken by bandits, or by enemy lords/mercenaries after sudden war declarations. As a result, it's something I don't usually bother with doing, since it requires commiting a companion/clan member towards it (and all the headaches that mught come as a result of that)
It always struck me as odd that caravans couldn't bribe their would-be agressors, or pay the kingdom they're in directly for the right of passage, since it's something that benefits both the owner of the caravan and the people of whatever settlement the caravan is going trough (by bringing goods they might otherwise have a hard time getting). The same goes for workshops.
