Good day.

Id like to ask anyone good in melee (best if using short weapon ideally without shield )from horseback saving his exploits if he would be willing to share a little of his skill and post some videos or screens from mp: for example how you handle situations when youre stopped with someone behind your back jumping 3m into the air to cut your head off , or how to block effectively to minimize harm to both you and your horse, fight at low horsespeed or stationary etc.

Generally blocking in the correct direction helps

Actually for all the situations described, using the manuel block while turning the horse would effectively reduce damage. Granted manual blocking on a horse did feel a little awkward for me at first. Practice it a bit.
