I am completely unfamiliar with bannerlords modding and was wondering how I could add a weapon to the game, as I find the grind for weapon parts excruciating. The weapon template from nexus that I've tried, Isn't working out aswell. With that in mind I wanted to edit existing weapons, however I find it to be much more difficult as it was in warband.

If you would like to add weapon with existing crafting pieces, you should try to look inside Modules/SandBoxCore/spitems/weapons.xml
You will see existing crafted weapons there. You can then add your custom item by copying existing one and modify it. But as you said you are completely unfamiliar with modding so maybe just observed the content of weapons.xml and Modules/Native/ModuleData/crafting_pieces.xml and crafting_templates and see how they are connected
Be warned though that if you start to experiment with it, you should back up first those xml because it is easy to mess it up.
