Also behaviour of cavalry should be changed if they were to be supposed to run routing units down instead of single charges at targets they should just follow them and killing like infantry does instead of running away and returning after a while back just for one target and repeating same process again.
Also horse archers should switch for melee when finishing routers to kill them instead of shooting around with occasional lucky kill though player can just disallow shooting but AI will not do that I guess.
Perhaps behaviour could depent on character trait if mercifull then army will survivors let go if cruel then..."disappeared they have"
For example Byzantines often did not kill all beaten enemies to let survivors fight for them or for other diplomatic uses, etc.
