Character class/specialty and army type/specialty when playing single player?
I have found that I both really love 2h-cavalry and lance + cav, while having a mass of archers in my army. The only reason I love this is so that I can run to the enemy, get them to chase me (when they are on foot), then have my archers hit them from behind.

But I do the same stuff, and I use the strongest horse I can find because I also stop the enemy cav so they don't run over my archers.
