To me its odd how at the start of the campaign your character already looks middle aged, especially since you're trying to find your two younger siblings with your other sibling who looks as old as you if not older occasionally. And on a slightly related note, there should be more variety in default character models, like in Warband.

I agree, I would like an age slider. It might make the beginning quest more awkward, though. If you make your character like 60 at the start, it'd be a bit strange to have your younger siblings still be kids. But... I kind of think that mild weirdness does not outweigh the benefits of getting your character the age you want.

The character creation could use slightly more variation, anyway. I would like a proper ginger hair color, so that I could approximate myself a bit more. And sometimes I feel like most of the female companions you come across kind of look alike. But those are separate issues, I suppose.

By the way, I think the brother you start with is actually younger than you, as well. When I look him up in the encyclopedia, he's said to be age 25, and I start out as age 30 or 31.

I haven't personally checked how old he may be, but I think it could change since his appearance does change with each new campaign, but he always looks middle aged for me.

That's fair enough I guess... although I'm not sure if it necessarily follows, still. You could have both of those features in, in principle.

One thing I would have liked is to start around age 20 or so rather than age 30. Makes more sense, then, to have child siblings, as well, in the campaign story.

You're right, he looks a bit older to me, too. Doesn't quite seem 25. But that might also be a sign of the times.

The only reason why there isn't one is because of perma-death, now you can die of age and play as your successsor. But, if you're not playing with perma-death on, it should be you who choose your own age.

Even with perma death you should be able to choose your age. If the problems with main story are strange, then give the option only on sandbox gameplays (sandbox start is not in yet).

However, I think the real reason is they just havent finished it yet, like the weight meter to make yourself fat or thin which is confirmed

Yeah, I've been battling myself about the weight, my character eats a lot (I don't run out of food, and I usually buy meal at the taverns) and yet, I'm super thin without my gear, and it bothers me like hell.

See no reason with removing the age slider. If someone wants to play as an old man and die early on to potentially loose the game because they have no heir? Sure, we shouldn't be limited to it. Only thing we should be limited is obviously playing a child.
