How to override conversation text at runtime?

I'm looking for a way to replace the text of a conversation during game execution (at runtime).

For example, replace an NPC's reply with a sentence chosen at random from a list of possible replies.

Any idea?
 
In fact, I'd like to know where I can intercept the text to change it. For example, when you meet a Lord and the dialogue starts with "If you please... Stop there, I would ask you for your name." Where can I change this text at runtime? Do you have an example of code or a mod that does this?

A reasonable answer to the question out of context, perhaps. However, it would have been necessary to specify to the artificial intelligence that the response should be about Bannerlord, and more specifically about the source code.

One can also easily recognize the AI's response style.
