Castles seem to be just towns without a market
Towns seem to be just castles with a market

There should be a much bigger difference between towns and castles and each should have its own function.

My suggestion to start with would be to remove villages from castles altogether and assign them to only towns meaning towns would have more villages offering different foodstuffs and add more workshops offering variety and could like at present be fairly easily starved out by raiding all their villages only now theres more villages to raid before they start to starve.

Castles should have no villages they should not contribute much to your economy except for gaining some money and equipment to sell when their patrols capture looters and bandits which would offset their wage costs
They should be fairly secure even with a small garrison of say 50. They should have a huge granary to be able to supply armies and barracks with training fields for training troops and a be a bastion to retreat to if outnumbered. They should be a base to patrol the surrounding land with troops I'd suggest each castle could have up to 3 patrols which would patrol and defend nearby villages and towns and could be added to your army if you needed the manpower.

The castle granary can be directly topped up by nearby towns when they have excess food and are at peace or by the player or armies when the nearby towns are being raided they should take a lot longer to starve out and be much tougher to seige giving a huge defender advantage meaning your attacker better have a 10-1 advantage and be willing to take loads of casualties to have any hope of taking it in a seige.

The castle dungeon should be escape proof for incarceration only with limited storage of prisoners say around twenty so would mainly be used for high value prisoners like enemy lords that you wanted to hold on to.

Dungeons should be removed from towns and be castle only although maybe a less secure dungeon call it a jail could be in towns where normal prisoners can be kept before being ransomed enabling escape attempts or other mechanisms like bribing guards to release them. The castle dungeon should be escape proof for incarceration only with limited storage of prisoners.

This would mean a few things losing a town would impact your economy even more than it does already so might be fought for harder, but might be taken back easier with a nearby castle as a base to train and build an army.
