I tend to agree with most of the things with this post, fortunately most of the annoying realism things can be disabled. I'm pretty sure that the realism is there to provide a challenge, that rising up from nothing in the Dark Ages Britain/Ireland/Scotland would realistically be hard to do.
Stamina is rather buggy by the way.
Enterprises cost too much to be worth any real profit generally, unless you're playing late game, and even then, trading tends to be a better source of income, though it is not passive.
Troops are a pain to level, I agree with that, though with lots of high level companions with the trainer skill this should be significantly easier, though that is late game. Probably the biggest turn off of the game, as getting your army slaughtered once and spending months, potentially years, to rebuild, while lords tend to easily rebuild their armies, seems greatly unbalanced.
Resting, take it or leave it, I would say it, and many other options, are all about immersion.
Edit: I think resting would work better if there was some sort of bonus for being well rested. I'm pretty sure your troops would be invigorated and more motivated after a long nights rest/resting for several days, than being penalized for not sleeping/resting every single day. Sure, there could be penalties, but realistically, you'd want to do something more after being well rested.
With future versions, I'm sure the game will become a finely polished weapon; it's the money/troops imbalance that needs the most work IMO, (I'm looking at you, ****ty arena rewards).

P.S. You know you can adjust the battle sizes in game, right? It's not the mods fault. Battle sizes are more or less the same as vanilla, whether on the battlefield, or the total amount of troops (if that's what you mean by 'army').
