Which nations use mostly infantry?

I currently fight the Golden Horde a lot. They are very heavy on mounted archers, which drags the battles on, a lot. So I want to start a war with an infantry heavy nation. Any recommendations would be welcome. Thanks.

all europeans have a lot of infantry. the country with the most infantry per army is lithuania.
apart from eastern powers, such as mongols and arabs, the other countries should have a lot of infantry.

                    My horse archer army quickly routed both the Roman Empire of Nicaea and the Latin Empire.Their consisted mostly of a mixture of infantry:sword shield and spearmen.Horse archers will decimate them easily but cavalry might have more of a challenge because of the great number of spearmen,the mercenary spearmen can be quite annoying in large numbers(10 or more) so only charge them with your cavalry when they are away from their spawn point.
