I havent played the game for a while so i thought id start fresh. Im thinking about a really weird build type where i would specialize in riding and wield a dagger and shield. Obviously the dagger is the fastest weapon in the game so it would yield lots of attack speed which would make it a decent weapon. Obviously the dagger has reach problems but the main question is can this work for m & b or the expansion. Does anyone have any ideas, i need advice.

It would work for a time but you will have problems with enemies with medium and heavy armor (depending on your chosen weapon and your Power Strike).

In old versions each hit (even with 0 damage) would stagger an opponent making light and fast weapons effective against everyone, that way you could nibble anyone to death.
But now there is a damage threshold that makes it possible that low damage does not stagger an enemy. The enemy would mostly ignore your weak attacks.

Of course it also depends in your own ability to parry and dodge.

What about a melee (unmounted) Spear Build that wields fast short spears spartan style?

I used to have a decent lancer in original and tried using one in warband but they butchered lancing in the expansion making it alot harder to do properly. I used to take out 4-5 guys per battle in mount and blade original. In the expansion, i can barely kill 1 guy because they made it harder to pull off with the controls.

I actually have a character that fights on foot with a balanced shortened spear. He's dangerous as hell. Although most of the time I simply beat people up unconscious. Even heavily armored ones despite the weapon only giving 22b on the swing(it's fast as hell, and with some good dodging and wild swinging it can actually do a good job).

In my opinion a dismounted person with a spear would not be very good, that is unless you plan to have a close range weapon (sword, axe or mace) to work with when the enemy gets closer to you (and trust me, that will happen eventually). I prefer a sword because they a usually fast and deal good damage.

1h swords are one of the worst weapons to use, unless it's a short (arming) sword to stab with. A shortened spear is actually fast and short enough to work as a charm in close combat. Though  you can't stab very effectively with it. It's more like a war staff or something.
