Have you ever tried to watch closely how the lances are snapping? That looks very stupid.
Usually, people who do this, are walking quite slowly with the horse, doing many turnings and trying to make you lose your balance at the same time when they are trying to kill you with the lance. So you need to try to avoid their horse by walking enough far from it. But the lance can also snap to the target. It can do like 35-degree snap movement in one millisecond and kill you even you were visually out of the range just while ago.
I believe that this behavior is programmed to the game engine to fix some other problem. Maybe it was too hard to kill anyone with the lance, so they "fixed" it by doing that snap thing.

Cav do this all the time in the competitive scene. He's talking about when a cav is moving towards you slowly for better control, but still fast enough to bump you and get the bump lance off, and the way they hit you is they hold their lance out a fair distance away from you, and then pull it towards you at the last second to hit you and deal extra speed damage because that's how polearms work in this game. TBF, it is kind of stupid, but not as stupid as cav being able to bump down enemies but not teammates. With the exception of polearm overheads, horses are the only other "weapon" with this kind of crutch. It's actually pretty disgusting how cav can be so easily useful to a team and deadly to the enemy while posing no risk to his own team. Bumps are OP, plz nerf.
