Depends for what?

Alayen can be made into a great fighter, though Rolf starts out the  best.

Jeremus is great in healing arts, though a weak fighter. Borcha the same for scouting.

Nazir is my favorite, he comes with the best armour and a good horse, and he has good fighting skills and high intellegence which makes him level fast from 3 where he starts.

 
Ehhh, Ymira? After some time in my company, she sometimes even beats Jeremus as surgeon!

Artimenner? Overall great guy, can be made into a good engineer + trainer as well.

Lezalit: Martinet FTW!

Borcha: A valuable tracker (at least as good as Deshavi), and not so snobbish as most others.


Alayen is a snob, but he starts with enough STR to wield a Zweihander!

Alayen can be leveled into a fighter.  when happy with his combat prowess, up his leadership and other stats, and make him a lord.

Deshavi and Borcha are naturally suited for tracking.
Artimenner is an excellent engineer.
Jeremus is a great healer.
Alayen is a natural knight--he's built for fighting from a horse.
Baheshtur can be either a great horse archer or a great lancer-type (if you want to level him in accordance with his backstory).
Klethi is good with throwing weapons, so I make her a huscarl-type infantry fighter.
Bunduk is, of course, a natural crossbowman.
I've used Rolf and Firentis as both mounted and unmounted fighters in the past, but they're not among my favorites.
Nizar can eventually become a good fighter, but he's weak when you get him, and his speedy horse only gets him knocked out all the more quickly.
Matheld and Lezalit can also become great fighters, but I haven't used them all that much.  Lezalit's high Training skill makes him very useful in the beginning of the game, though.
Katrin I find underwhelming, although she can be a good secondary healer.

However, Marnid and Ymira are the most versatile companions.  Since you get them both at such low levels, you can build them up to be anything you want: fighters, engineers, healers, traders, diplomats, you name it.  You just have to have patience to get past their initial weak stage.

Not that much patience. At such low level they go up fast with just a couple of kills on each battle.
 
Right of the bat Nizar is probably the best fighter. plus he has is own courser.

But any companion can be great by level 25-30 if you focus on a few skills and weapons.
For example give Jeremus a crossbow, 2 bags of bolts and a 2h and his weapon proficiencies will go over 200 fairly quickly even by focusing mostly on INT.
 
Prompted by this I figured a ranking by how low their starting rank is and how much they come with in relation to skills etc. Ranking is for gaining party skills based on INT. Trade and Looting are not included. I do take into consideration fighting skills though as that is needed to level.

As for looting Klethi is best, but if you do not have her Matheld works well. I use Rolf or Katrin for trade, but it is not a skill I care about much.

As for arms I give all my companions mounts, long swords and bows (have not noticed much dif between x and reg bows) -- this tends to keep them uninjuried  and maximize kills for leveling.
 
I always had luck with Firentis, it seems that he kicks ass if you give him the right gear, something around Platy-chainy armour.
