Items in shops are random. You have to run about to look for them.
Morningstars can sometimes be found in the booty of defeated dark knights/dark riders.

Or you could just stay at the inn a couple days till the shop restocks.

I know it's random, but some places seem to just stock more of something that another consistently, armour, bows ext.
