Well sometimes it's fun to be loyal, so it's best in my opinion to bide your time and wait for the right moment to rebel. Have you ever considered supporting a claimant? That's pretty fun to do.

When I'm bored, i make new games and then support the claimants of all the factions and then wait to see what happens next.

Favorite thing to do as a vassal is kind of a jerk move thing really... find a vassal who owns a castle or town that I want, build just enough relationship with him to suggest and action and then send him on a suicide mission. LOL amusing to follow behind them and watch them get mobbed. I have also done this with the king, but I follow behind and save him to get renown and influence! Really effective way to get lots of favor really fast!
