I've only a little note regarding to the Hospitallers surcoats: In some sources I read that the red ones with the white cross developed for the first time in the second half of the 13th century but the mod takes place in the first half. So, if you want to make it historically perfect you should use the black surcoats with the white crosses. Otherwise, forget my post.
