If you want realism, run out with the sword you bought from a rummage sale and swing at the nearest living person. This is a game, much like how chess isn't realistic either. I think people forget that while yes, realism is cool... it's not the only the reason people play video games. People play games because there is that realistic element inhabited within the game play itself. If you really want to complain, complain about the fact that every model is the same height, strength and body weight.
Chess isn't realistic, but it doesn't look like Benny hill show. I'm sure people play games for a wide variety of reasons, but for sure i know very few that play them to be comedic relief. And people running around swinging swords like naked russian dudes whipping each other with branches in a sauna are nothing else than comedic relief.
Immersion is quite an important factor in gaming, and the only thing I could see as a worse immersion breaker than this is bunny hopping (and unfortunately there are already some goons in the game that are starting to try and exploit jumping around like a rabbit to obtain various effects).
ultimately, I can only chuckle at the fake elitism I see, as you try to justify this silly setting with it needing more "skill" or being more "challenging".
there's no more challenge in the fastest settings than in any other. It might be harder to manually block with a weapon (and most people don't even bother, turning the game mostly in a spamfest, or just use a shield), but it's also easier to hit.
While one aspect may be more challenging (and becomes much more based on pure luck), the opposite becomes less challenging. With medium speed going past the defense of a decently skilled player is challenging. With fastest speed that challenge is much lessened.
Ultimately, it's your server. You can do whatever you like with it, but really, don't bother justifying it by trying to put up the l33t facade. It's out of place.
