For the cavalry hooking... There are several mods having a feature where you can dismount enemies from horseback by hitting them. Add that to halberds and similar weapons, and voila.
Grappling is extremely common whether you are armed or not. Hooking someone with your weapon, for example, IS a way to grapple while armed. You can hook in just about the same fashion with a longsword, by the way, using the Mordschlag grip.
