I think there is a reason that this is the beginner forum.
I really like cavalry because I have tended towards a raider type character. That is to say, I prefer to knock over caravans and loot and burn. For this, nothing beats some nice medium cavalry. This enables me to outrun the lords who, frankly, will kick the snot out of me.
I like playing small - it's pretty darn fun.
I like archers because I love the visual look of massed arrow fire.
I like when these two things are combined into cavarly archers. It's great for killing bandits and making short work of (don't laugh) travelling farmers.

No love for companions? I picked 'em plus cavalry.
You can dress up companions with all sorts of armor and weapons and the don't die. And they give you the ability to build up all kinds of skills within the party. So yeah, I usually pick them up as quickly as possible when I start a new game. All of the regulars just come and go, but my horsemen of the apocalypse will be with me always.
