What I have:
an army that's half infantry (footmen and archers) and half cavalry.
I put infantry 20 paces in front of archers and cavarly and then I run with my horse towards the approaching enemy, circle around cavalry, approaching infatry lines, giving a couple of hits and throwing a few down with my horse. When I have half of their army on my tale and they are nicely spread over while my soldiers are formed together, I order a charge. Since many of their soldiers are chasing me and not putting up a fight against my troops I can win a larger army.
Downside: It's not that rare for me to drop unconsious from ranged attacks or when I close in to join the battle.
