Some flexibility in these quests?

Get this. Ole Count Haelbred or whatever that old coot in Curaw calls himself, wants me to pick him up 11 Sumpter horses. Now, I appreciate that he doesn't want me to pay through the nose for this stuff, but it's kind of a pain in the ass having to find 11 of that exact type. I could understand him not wanting me to pick him up something inferior to what he asked me for, though if he's desperate, I'd think an arrangement could be made...say, what he pays me for completing the quest varies according to the quality of the horses I bring him? But if I decide to supplement the Sumpter horses with slightly superior ones, maybe because I got sick of looking, or maybe because my guys managed to kill a few Steppe Bandits with the horses intact, then why should that be a problem?

Maybe his new horsemen don't have the riding skill to handle anything better than sumpter horses.

You have the flexibility to go for the spirited or swaybacked sumpter horses, that kind of thing.

But it is pretty annoying having to do a quest like that, carry up to 10 horses around as you go from town to town. with a quest like that, i'd rather not do it. but once you ask a noble for a quest, you have to do exactly what he says, there's no opportunity to turn it down. it would be nice if you could, especially if you are low level with no army, it's pretty hard to capture the enemy noble man or to track down the raiders...
