From what I understand it's just an arena game with rounds/waves. The arena stays the same.

Strange. It wouldn't take much to make some new arenas and the game would look ten times as interesting. Is it still in beta?

Alpha. And the arena is a separate mode altogether from regular adventuring in slightly more varied dungeon environments.

I lied. There is a dungeon mode, but I guess most people here seem to post screenshots of the arena mode. Steam shows a lot more of the locations.

I cleared the damn arena mode but the story mode whatever is frustrating me. Every time I encounter an enemy I aggro he gets one or two free hits as I desperately attempt to switch my torch for something viable as a weapon.

By default I keep the torch in the left hand in lieu of a shield, with a one handed weapon in the right hand- I find blocking is pretty reliable without a shield. If I want to use a two hander I make sure there is enough light to see by and have to know I am going to meet an enemy; as you've found Roran it is not much good trying to change weapons when they are about to hit you. If there isn't much light you can drop the torch on the floor to help illuminate a few metres around you until the enemy is dispatched, then go back to the one hander and torch combo.

Also, try not to fight at all. It rarely benefits you
