Remove the ability to use non-class gear like horses and bows

Literally the title.

Its not as prevalent in Skirmish but in Captain its terrible. Dude picks melee infantry class and then somehow gets bow from dead body which he can use without any problem and with very good accuracy and then he can just pick up random stray horse and once again, without any problem whatsoever use it. Bring back Warband balance where you had to be rider to use horse jesus christ, this is beyond broken.

Absolutely "amazing" to have half of the cavalry unit wiped by random dude with two hander who stole horse and proceeded to wipe stupid bots off the map.

I want to see this implemented in singleplayer too. Where you can ride a mount that requires 6 riding with riding level 1. However, the mount will not go the right direction at times, or go too slowly/quickly, or throw you off in the midst of battle when arrows are flying towards you.

Lower level cavalry should also have a chance to lose control of their mounts in the midst of battle or when their mount takes damage, even if temporarily.

I don't know but I think you'll get your wish. As far as I know there's no "riding skill stat" to get on a horse like in warband, but it feels much better if your riding skill (like weapon proficiency in warband) is higher. This is just based on the custom battle mod, but having higher riding skill does give you a big advantage over the stock cavalry units using the same horses. I too would love too get bucked off for being to much of a newb.
