Probably a dumb question but I wanted to know if having an extra shield on my back takes away damage, if at least arrows? I thought it did but I began to question when I would stab people in the back that had shields there and there didn't appear to be a block.

If you get shot in the back the Shield will actually block it so yes it does help. Im a real cavalry/infantry person I always carry 2. It can be very helpful to have a bolt stopped inches from the back of your head. I believe your shield skill modifies this so you have more protection but im not 100% sure if it increases the protection of the shield on the the players back.
 
In SP it does, But not in Multiplayer I think. Also, enemy soldiers won't get protection from shield in back.

And it blocks only arrows.
 
From what I observe:
1) Shields will always block arrows no matter where they are right now. .... Okay, never tested dropping and firing an arrow, but if you have it equipped, bolts and arrows will be hard pressed to hit you unless it happens to be a buckler size.
2) No protection from melee, I believe this is for balance. However, I think it still has a chance to make your attack bump off if you hit the shielded part wrongly.
3) Wearing two shields will make you SOOOOO SLOOOOOW. Frankly, unless your in a siege with tons of crossbowmen.. I'd suggest one big fat shield only.

You could do that, yes. When an archer from higher ground shoots at me, if I'm a rhodok crossbowman, I'll face away and reload, while using ` to check what the archer's doing. Exposes less of me head, which is where arrows hurt the most. Backwards walking is pretty fun, though. Just wish I can stab backwards.
 
sheild on your back only negates a 'tiny' bit of the damage,  i'd say dont bother and use the extra speed you will get from not carrying it to your advantage.
