As the question mentions, I am curious to know what the handling stat does as of right now and if there are any plans to add more features related to that statistic later on?

It highers the chance of you hitting harder acc to sources but im not sure if its correct...Re: there we go as explained above 
But yeah this ive noticed a lot and is important with two handed axes..especially hitting with the blade right

To put it simply the better the handling the greater the chance to hit the sweet spot for max damage.

Does all that work in SP too? I mean bash, kicks... or MP has some uniq combat componenets?

yes ofc
you bash with shield by holding down block then click E...and kick is just E to if i member it correct. You can also bash with your weapon like ex 2 hander or spear by doing the same thing as with the shield
