Is there a way to order troops to attack something specific ? Stuff like "marksmen target the enemy lord" ? Or even helpful like "hey cavalry go after mamlukes or sharpshooters" so your precisious few cavalrymen kill enemies most dangerous units instead of being wasted on useless crappy troops ?

Unfortunately, there is no such option.

That kind of sucks.

Once melee combat starts I don't bother with commands anymore. Strategy in MNB seems to be setting up troops before the opposing armies clash.

Though it makes sense I guess. Even in real world in 21st century commanders don't have Total War like control...

You can order group to hold centrain position by holding and releasing F1, they will target closest enemy(So you can cause them to target shapshooters or mamelukes).

have the infantry move forward to the main force or wait for its approach, and then have cavalry follow you to the designated area and target them to charge at that point.

otherwise it is all just one big 20 men to 1 guy obscurely

Careful applied use of the f1 key will make a unit engage as it passes through other units - good for cavalry strikes but dependant on the commanders' position
