One handed/Two handed weapons

I like how the bastard sword can be used either as a one or two handed weapon but i have a few questions regarding its use.

Which stat contols its power, either the highest of the two or does it change depending on how the sword is used?

I have made a new character using polearms, throwing weapons and 2 handed weapons for a change and am wondering whether i can use the bastard sword with a shield and have it still be governed by my 2 handed weapons skill. It would also be hard to use it 2 handed if you have a shield in a weapon slot. Constantly removing the shield will be very annoying.

My guess is that when it's used one-handed there's a penalty to speed and damage and the one-handed weapons skill is used. So if you only have two-handed weapons skills, I recommend getting an actual two-hander.

when the sword is used as two handed: the two-handed skill goes up. when you get the shield out: one handed goes up.
