Yes, they are companions except for the Hussars because their officer is a veteran one. And yes, you can recruit a flag bearer once you reach the required amount of troops in each regiment(too bad you can't recruit more than one: it feels wrong having a flag for 100 troops of the same kind).
Britain allow two Flag bearers for their Fusiliers (Highland and British Regular) although I've never seen anyone else, and as Austria I can never get any flag bearers, even though everyone else does despite having 50+ per Infantry group. And I could never for the life of me get a cavalry flag bearer.

Before 1.2, I ended up with a bunch of Austrian soldiers from rescuing prisoners during the Austrian-Prussian War, probably deserters who were caught.  They often made a large portion of my army in the later parts of the war and though I didn't include it in my War Diary, I ended up using them to full effect when laying siege to Austrian cities.  That means my Prussians and Spanish Guard would stay behind as Austrians were ordered to charge ahead and catch the full volleys of the enemy and engage in a mass brawl leading to MANY casualties (set to group 5, if I recall correctly, renamed "Cannon Fodder").  After most their number has been taken care of, I advance my Prussians with FAR less casualties.  This poor Austrian Grenadier happened to be a coward and was promptly shot and killed on the spot for disobeying orders ((and being stuck on the enviroment)).

Just a few from on-going adventures of Jack Flanigan (yes I know the last name is missing an "n" and I don't care!), in the world of L'Aigle!

Starting out.
At the local pub after a bout of boxing.
On my travels I encountered a man doing the dance craze that was sweeping across Europe, the CANNON DANCE!
Soon after getting tired of chasing bandits and boxing matches I joined the British Army was swiftly promoted from private to sergeant, although much of my income was from boxing.
Myself and my Black Brunswick guards in a major battle between British, Rheindbund, and French Armies.
I even captured an enemy standard.
Leading the charge!
After many months and 200 or so boxing matches to supplement my pay, I got a commission as a lieutenant.
 
Well did a small adventure of a Italian man I named Vincenzo Petrocelli. His career went far with many victories until he... Passed away when was taken as a prisoner.
