I know it sounds crazy and it's embarrassing but that's how I do it.
(Usually using the arabian_ground scene prop as floor and building up the scene with wooden walls, tavern doors etc.)

A few things to mention:
The sharp contrast between the stone color of the walls and the mountains looks a bit odd. Maybe if you try the brown stone.
The Gatehouse looks a bit "overstreched", in my opinion. I guess you wanted filigree, a bit "Neuschwanstein"-like structures, wich looks good in those round tower roofs ontop the keep, but the gatehouse is just a bit overdone, i think.
But overall i like it.
Now for decoration details:
A castle in reality is stuffed with all kinds of small sheds and storehouses. Your stable and the church are set very strict right-angled, which appears a bit too perfect to me. Furthermore, in a stable there'd bee straw and maybe horses, around a chapel there could be a little graveyard. You also could add a smityh somewhere - every caslte had one.
The outside plane looks great! You planted many trees und stuff. So you can inside the castle: A big tree in the courtyard makes impression and normally there'd be lots of shrubbery around the buildings and castlewalls. I know, planting masses of ... wel, plants, is not as much fun, as building up the castle, but without those, the castle looks unrealistic.
An one other suggestion: You could set up some constructions like "stand_cloth" or what's it named on the battlements, cause no guard is willing to stand the whole day in the burning sun. I use things like that in my castles also and it looks good and loosens up the monotonicity. "braizer_with_fire" or simply barrels with arrow reserves are nice objects on the walls and towers, too.
I hope, this all will help you a bit. The fortress looks very good, so far.
