New mount - Cow

Hello everyone!
I know there's a way of adding new mounts into the game (there've been elephants and camels in some mods) but I was wondering - there's a cow/ cattle map icon in the game, and I think I saw some cows in some village once, but is there a way to turn a cow into a mount using only the vanilla assets? Or would I have to create one from scratch?

Not using native resources, no. However I know there is a good cow model in the CWE OSP but I think you'll have to download the whole thing which is quite large. But it is a nice cow!

Judging by the screenshots, the whole mod is nice (though I'm not a big fan of all those holy wars mods). Thanks!
