What about troops
To say briefly all the troops can be divided into four types: mounted, ranged, assault (like axeman) and stopping (pikeman). They may be of light, medium and heavy equipment.
Recruited villagers can be upgraded to various militia types or townsmen. Militians give you light and medium infantry, rangers or light cavalry. Those out of townsmen give you medium and heavy troops, including different types of knights that are growing out of Noble Citizens.
I've added Castile troop tree to the screens section of first post as an example. Their troops are preferably lighter though some faster then other factions troops, javelins are mostly used as a range weapons. England has a lot of archers out of villagers, HRE more into heavy infantry and top-class mounted knights, Franks are something average with an amount of Voulgers and Halberdiers and so on. All european factions has close troop trees varying on details. Russ are a bit different just to give them difference )
All the outlaw and rebel factions have their own 2-3 stage troop trees too. They are all of lower classes (not strength!) to make them able to upgrade troops by winning battles without player presence (regular troops are upgrading slower)

The new mercenaries and deserters are great. (The 'Denmark warrior' should probably be 'Danish' or 'Dane warrior' though).
