If you want a basic overview, read the stickied background on these forums. There is also some on the website and wiki but most of what you need can be found ingame, either through talking to people in taverns (the Order Knights, the tavern keepers, the travellers).
The Companions will also tell you more about their homelands / Orders.

I've always been a horse guy myself as well.. Nothing like leading the charge with the Calvary on horse into the infantry or archer lines ..
Always have a blast with thatAlmost feel like I'm taking part in the "Gladiator" movie, since I'll move my infantry and archers up one solid back to back line, and then have my Calvary with me all the way on the flanks, then once the infantry lines clash, flank em! with my Calvary!
Fun times!
Though there also times I go head long into a Calvary charge and I'm usually the first one to get knocked out by a lance, lol.
