Note: This might not be the right sub-forum to ask this, so I apologize. I figured that since Bannerlord is hyped and expected, I'd get an answer here faster than on the Warband sub-forum, especially since there's no sub-forum to discuss such topics in the first place.

Where can I learn ALL the existing MnB lore? Sure, there's the in-game dialogs, and TW blogs, but is there a more clearly defined way?
Also, surfing the internet, I came across various community 'memes' (for lack of a better word) that reflect the lore side of things, for example, Harlaus throwing feast all the time, even during wartime - but this isn't new. What's new is that he's referred to as "Harlaus the Fat", which is - I doubt - an in-universe thing, since there's no canon fat-man model in classic MnB and Warband (or if there is, it's not used). Also his love for butter - where did that come from? Anyway, where can I learn all of this non-official lore as well?

I'm asking because I thinking of writing a story set in Calradia - fan-fiction, obviously - but I want to make it good and appealing.

You want all the lore compiled into one easily accessible  source? Your best bet is the mnb wikia. However, the bannerlrd dev blogs for the aserai and the Calradic empire (a very important faction) are not out yet, so I would hold your breath until then.
 
An important aspect of M&B is that it's essentially a sandbox, in every sense of the word. All we have on the lore of the existing factions, world, and notable people come mostly (or even exclusively) from companions' remarks while they're telling you their backstory. For example, we know about Grunwalder leading the resistance against Swadia because Bunduk talks about it if he's in your party when you pass by Grunwalder Castle.

Other than that, there's not much lore out there, and I think that's great. This should give you a decent amount of freedom when developing mods that take place in other periods of Calradia's history, so it should work the same for fan-fiction.

About the Harlaus thing, it's because of his tendency to call feasts during wartime, which became a meme in the player base. I don't think it's a trait exclusive to Harlaus, but because most players swear to Swadia, it got noticed more. The butter meme is because of a bug in the Floris mod that made swadian villages' loot be entirely comprised of butter.
