I think it may have to do with how prosperous the town is; also I think the prices may change when Caravans come and go (instead of when the day switches). Like today I encountered a bizarre sale in Suno where oil was selling for 45 and wine was selling for 35

I did have max trade skill, but still... that would be an incredible deal no matter your skill. I never used Suno much before but now it's a must-stop for me.
Salt also has good days and bad days. Salt usually goes for 180ish average but in Wercheg and Bariyye I sometimes manage to find salt for ~65-85 denars each.
Bariyye is also decent for dyes, but I've never seen them go below ~110 denars each.

This post got me started with trading. Prices can vary by a GREAT amount (like going from 3 digits down to low 2's). For example: Praven is a good place to buy Ale. If you find a good price it may be around 80, however it is possible (without a very high Trade skill) to find Ale there for 13. I'm not sure what causes the price to drop so low, but that's when you make your real profits (as described in that post I linked above). The same thing happens with the other commodities.
