Lord Defects

What determines what faction lords defect too? In my current save, all the lords that leave their faction always to go to the rhodoks or nords, even though my faction(the sarranids) has half the map.

Well I don't think I relly understand what you mean, your faction is sarranid sultanate which means you are a vassal? If so, I think it's a good time to take a castle and one more and one more until the king refuses giving it to you, ignore him and take it and you have all the castles you've taken now, not at war with anyone. Good time to get a wife if you haven't, convince some lords to follow you. Focus on the ones who have no fief, usually their relationships with the kings are bad. Make them marshal as soon as possible, it increases 6 relation points tho, hold a feast as soon as you can. When the relationship reachs a certain point (about 50) they will not get jelous when you give fiefs for other lords and similar for being looted or losing battles.

I'm currently trying to make the sarranids win, I did that with my other save. My problem is that no lords that deflect from defeated factions are going to us, even though we are the ones beating them.

oh it sounds weird... and fun. Idk but maybe you can beat all the others and swear allegiance to him again
