So beyond siege camps I don't believe there are any other ways to level Engineering(If there are others, please do let me know!). In Warband you could spec into this by contributing skill points per level towards it with the max cap being determined by your Intelligence attribute.
Now I'm not sure what else you intend to include for us to grind these skills but if I might make a quick suggestion or two:
1) Allow us to "manage" or "oversee" fief/holding improvements and add X amount of % towards finishing the current project per day, this would in turn give you XP towards Engineering.
2) When being sieged and on the defensive, allow us to gain some amount of XP per defensive siege weapon created.
3) Maybe even give us a slight XP hit when we actually construct the siege camp itself. Upon completion siege camps seem to have palisades and other wooden defensive structures, this should give atleast some amount of engineering XP but not too much where it can be abused.
These are just some ideas I thought up that I believe might help with Engineering, since it's a vital skill in sieges and also could be used to improve holding constructions in many ways. If anyone else has any ideas feel free to offer them, or if you have any constructive critiques I'm also open to those!
