Two points for do more difficult:

-Buy land more expensive.
-You get income each month or two months (actually each two weeks)

Making land more expensive is a good idea. Would make it more.. ehh, of a real investment.

I think that it may be too long if you only get your income every month-every second month.  But hey, I'm up for it.

Cattle from villages should provide you with both hides and meat, when you slaughter them.

Horrible idea. The way some people play, if it was 2 months, it would take forever before they get anything. 1 month... maybe. But making the land more expensive AND 1-2 months to collect, that seems too much to me.

land owning incomes > winery incomes.
If that's 2 months, winery will give very more !
 
It would be great if you could direct the produce of your acres. This would tie in nicely with manufactories
wheat-> beer, grapes-> wine, flax ->linen you get the picture. With a one time a year harvest and maybe two times for wheat. With events like good and bad harvest, looting and damage from sieges etc

Also i was thinking as a store of value, gold and silver bars (or bag of gold or silver), with a certain exchange rate. So you dont have to run around with 20k shilingas but you can actually buy a gold bar and put in your chest at your hideout which you can then sell at a merchant for cash when needed.

These are both excellent ideas.  When i first saw this land owning option i though sweet now i can create a chain with my manufacture in the city and have nothing but pure profits from now on. Alas this was not how it worked but is still a great new feature as it is.  But if this idea of picking what is produce could be added, then be able to a set amount of produce to the manufacturer with the rest going to market to be the profits collected from your land then i would love this mod even more.

And being able to turn shilingas or whatever into gold or silver bars for safe storage is an excellent idea.  I hate being defeated in a battle and losing money, even though it does not happen to often except in the beginning when i focus on trade before I can afford a good sized war band of my own and cover there support expenses.  I support them both add these features!
