Is there a way to get more then an village under your control?....and maybe a fort or two.

Yes, it's possible. In my current game I have one village and two castles, however in the process of getting these I've conquered about three other castles which I didn't get given.

I'd say it's either determined by your renown (100 renown = 1 fief, 200 renown = 2 fiefs?) or else is completely random.

Choosing a faction with three enemies (the Nords and one other faction only have two enemies) means there are several more castles you can legitimately besiege before you have to move onto annoying caravans in order to make a faction hate you (you can't just arrive at a neutral faction's castle and start besieging it).

Take some of your men OUT of your castles.
You have to pay their salary too, now.
