As an option have the ability to give each man under your command a specific weapon and armor. If you used this option you would have to provide the weapons yourself.
 
I was thinking of the same thing a few days ago, but came to the conclusion that this just wouldn't work. It would be semi-fun at first, but after about 10 min it would just be annoying. Imagine having to find equipment for 40 troops? and then when they die, having to replace it all. Not to mention the anguish if going through setup after setup equipping all that crap. Maybe if your troops had an..."equipment rating". Each stack has its own rating, say...1-100. A 1 being practically naked with a rusty kitchen knife/cracked bow, and 100 wearing the best armor and weapons that particular stack could sport. And instead of equipping everyone, you just "donate" arms to increase that rating. So if you have a group of crossbowmen, to increase that rating you give them bows/crossbows and various types of lighter armor. Likewise, with knights, you would have to donate horses/swords/lances/platemail and the like. However, still make it impossible for an archer type stack to be wearing platemail and such(i.e., donating heavy armor or 2handed axes to archers does not increase this rating). Their best equipment at rating 100 is still dependant on the class.
 
Y'know, I kind of like the eclectic armaments of the Vaegir horsemen, but yes, that would be kind of cool, especially if you were friggin rich, had a small force, or had the option to only individually outfit a certain number of your troops.
 
Yes, an option to equip your troops would be interesting and, I think, useful on those occasions when you take a particularly choice weapon or armor as loot. One might award the captain of the Vaegir knights a distinctive shield or banner.

As for being tedious, you could alway choose the default weapons the troops are already provided. Choosing the default could be automatic and you wouldn't be required to go through all units one-by-one.

Frankly, since combat is the raison d'etre for Mount&Blade, and since so much of it is the same thing again and again, adding variety and individuality to the combat would help. I love the game but endless skirmishing with the same nondescript troops sigh.
