So I asked about this myself, sometime back and I got no detailed answers.
With some help from Kraggrim I figured out a simple way about this, and as I saw some other people on that thread wanted the same, I thought it's a good idea to share it here.
I'm sure experienced modders already know this, but again, some simpler folks back on that thread didn't.
First, go to the directory of desired module and open Skins.txt.
This is what the default Skins.txt should look like:
Now, to start this off, you need to copy-paste (at the bottom of the text file, just after the female skin is finished, make sure there is one space between) the skin of either the male or the female character and rename it to anything you want, just make sure it has a 0 after it.
The "2" at the top of the Skins.txt file, just below "skins_file version 1" means there are two working skins in the txt file, so if you want to add a third skin, repleace 2 with 3, four skins with 4 and etc.
Next, since you are probably doing this to get your player character or an NPC either smaller or taller, change the "skel_human 1.000000 " value to anything you wish. 1.100000 was enough for my player character to stand out from the crowd, but I'm going to make it a 2.000000 so as to very clearly show the difference.
Don't touch or change any values other than the mentioned above unless you know what you're doing.
The end result should look like so.
Save and close the Skins.txt file.
For the player character to acquire this new "skin", you will have to first apply the skin on an NPC, then check the new skin's value with the save game editor and apply it on your player character.
To do this, first download the save editor at http://forums.taleworlds.com/index.php?topic=295270.0 and Morh's editor at http://www.mbrepository.com/search.php?string=morghs
Now open up Morgh's editor and navigate to the desired module.
Open troops.txt and scroll down to an NPC you want to make bigger. It doesn't really matter who, as you can later change him back to his normal size through the save editor, we're only doing this to acquire the value of our new skin so we could apply it to the player character.
I took King Ragnar, for example. He is listed as male, which is skin 0, if you would list him as female, he' be using skin 1, for our skin, you have to list him as "other" and apply skin 2, as it is the third skin on the list.
Click on "update troop" and save changes, you can now close Morgh's editor.
Now, for this to work, one needs to start a new save.
You can make your player character shorter/taller on an already existing save as long as you have the value for the new skin, but to acquire that value one needs to create a new save.
I started a new save and here he is, King Ragnar.
Yeah... 2.00000 was overkill.
Now save and exit Warband. We're now going to go over the save editor.
Open it up and navigate first to the directory of desired module, and in the second tab pick a save game.
After it loads up, scroll down to "troops" which should be somewhere around the bottom.
The player is at the top of the list, but we first need to go down to find Ragnar so we could see what the value of our new skin is. Ragnar is #213. Click on the troop you gave the new skin to and scroll down to "flags".
As we can see above, Ragnar's "flags" says 18. This means that our new skin is "18", so we can now go ahead and replace that with 16, 16 being the default male skin, or if you want to keep giant Ragnar you can keep 18.
You can now go ahead and replace the player's flag value with 18.
And... you're done. Just don't forget to export your save.
2.0 was overkill, so here is me as a 1.100000 beside Ragnar.
Here are some example values. Taken from ACoK, so credits to Cozur.
Now, a couple things to note.
First, there is a side effect to this. Every male NPC who has his skin changed will be referred to as "she" (she is the lady of xxx, last time you saw her she was near xxx etc). My knowledge in modding is very, very limited so going about this would require way more effort than what I personally am willing to go through.
Secondly, if playing on a module that already has differing NPC sizes (Brytenwalda, ACoK), you can skip the first part and go straight to the save editing, you just need to find the values.
If you want to ask a question, I will do my best to answer but can't promise anything, because as mentioned earlier, my knowledge is limited.

For the player character to acquire this new "skin", you will have to first apply the skin on an NPC, then check the new skin's value with the save game editor and apply it on your player character.
To do this, first download the save editor at http://forums.taleworlds.com/index.php?topic=295270.0 and Morh's editor at http://www.mbrepository.com/search.php?string=morghs
Now open up Morgh's editor and navigate to the desired module.
Open troops.txt and scroll down to an NPC you want to make bigger. It doesn't really matter who, as you can later change him back to his normal size through the save editor, we're only doing this to acquire the value of our new skin so we could apply it to the player character.
I took King Ragnar, for example. He is listed as male, which is skin 0, if you would list him as female, he' be using skin 1, for our skin, you have to list him as "other" and apply skin 2, as it is the third skin on the list.
Now, for this to work, one needs to start a new save.
You can make your player character shorter/taller on an already existing save as long as you have the value for the new skin, but to acquire that value one needs to create a new save.
I started a new save and here he is, King Ragnar.
Now save and exit Warband. We're now going to go over the save editor.
Open it up and navigate first to the directory of desired module, and in the second tab pick a save game.
After it loads up, scroll down to "troops" which should be somewhere around the bottom.
The player is at the top of the list, but we first need to go down to find Ragnar so we could see what the value of our new skin is. Ragnar is #213. Click on the troop you gave the new skin to and scroll down to "flags".
You can now go ahead and replace the player's flag value with 18.
And... you're done. Just don't forget to export your save.
2.0 was overkill, so here is me as a 1.100000 beside Ragnar.

First, there is a side effect to this. Every male NPC who has his skin changed will be referred to as "she" (she is the lady of xxx, last time you saw her she was near xxx etc). My knowledge in modding is very, very limited so going about this would require way more effort than what I personally am willing to go through.
Secondly, if playing on a module that already has differing NPC sizes (Brytenwalda, ACoK), you can skip the first part and go straight to the save editing, you just need to find the values.
