How to help defend a castle/town?

When my castle/town is being attacked the only option I get is to sally out or leave, how can I defend the castle by being on the walls instead of fighting with the enemy outside? The same goes for when trying to assist fellow lord defend his fief.

I was waiting in my castle as the enemy besieged it, yet only option I got after was to sally out.

You need to wait until the sieging army attacks

if I wait outside when I try to go inside after I lose bunch of troops and still only get the option to sally out. When I wait inside it automatically stops waiting and gives me option to sally out after couple of days once enemy besieges it

When you get besieged and get the option to sally out the game pauses, you need to resume it and wait until they attack.

Yeah it may seem a little confusing at first, but it is basically a screen like the one you get when joining an army, but this one automatically pauses your game which kinda makes it look like you have no other option but you can manually press on play or fast forward again ( 2 or 3 default hotkeys )
