You can't add more main menu items, instead, rename it and use the menu entries to redirect elsewhere... for example "Start a new Game" > "Start Campaign", locate the correct menu id (usually at the start of the file).

Modify your main menu background editing main_menu_nord.dds that is located in your main Textures folder, there are a lot of tutorials about DDS editing, so read one.
