I noticed that when i kill and knock enemies off their horses; my men cannot mount the horses because they dissapear (fade away) before they can mount them. Why is this?
because it would take alot of memory if the horses remained in the game. if you want one of the horses to stay you have to hit the rider of yourselve while being on foot.
Also, this has been mentioned constantely, please put some effort into looking at the SECOND page of this forum and doing a search.

How much more memory would it take to have the horse sit there for 10 seconds before fading out? For that matter, why should it make a difference if you free up a horse while mounted or on foot? Even if your other soldiers left horses standing around mountable for a few seconds it would be a big help and shouldn't cause too much performance trouble. If nothing else it could always be an option to turn off.

1) If you had a large battle where all enemies were mounted (e.g. 20 vs 20 battle), just think how many horses would be standing around in the middle of the battlefield if the game wasn't set-up the way it is.
2) If you are already mounted what do you need the enemy's horse for?
3) If you are on foot and knock an enemy off his horse it won't dissappear and you can mount it (when you actually do need a horse).
4) If you have mounted soldiers in your party, you can issue the "dismount" command and then nick their horse.
I fail to see the problem with the current system.

And if, after the third or fourth wave, there are some 78 horses standing around it sounds like a lot of fun for me, to see the framerate drop to something around 2 or 3.
Then riding through the map will become a challenge at last 'cause every 5 seconds I'll bumb into a horse-obstacle.

Now imagine all the horses get killed.
'Dead bodies stay' is a default game behaviour, so you got 78 horses lying around (same number of polygons) Now do you think your framerate gonna drop?. To be honest, I do not experience any performance problems on my good ol' gfmx2
Of course I'd be ok if some excess horses ran away (or pretend to run away, by disapearing instantly as soon as they are outta my field of vision).
But there's no way you can justify disapearing of every one and each horse regardless.
Did anyone read vachir's post? He said that horses should just stick around for 10 seconds or so before dissapearing. I agree, i think this would work just fine. There really is no need to have 2 dozen idle horses sitting on the map, but if i need a horse i shouldn't have to worry whether or not the next one will stay or not. I think i remember someone suggesting that after a few seconds they should run away...possibly just trot to the edges of the map before dissapearing. There are quite a few ways of handling this, and i do think the current system needs to be improved.
