I do not take credit for the video, but the information provided in it is still viably sound:

TL;DW - For those who don't want to sift 9 minutes of video:
- Locate your Bannerlord game directory, and append a suffix (old/new/alpha/beta, whatever) to the end of the folder name by renaming it
- Do the same with the Bannerlord folder in My Documents (to preserve saves/settings)
- You can make a copy of your current game directory to use as a base to avoid downloading the entire game again. Remove the suffixes from the copied directory so Steam uses it when patching.
- Opt in/out (depending on what version you currently have installed) of the alpha/beta and allow steam to re-download (or patch) the game
- When you want to play a different version of the game, simply re-apply a suffix to the current playable directories and remove the old/new suffix from the version you want to play.
- One copy of the game should always be the default folder name to prevent Steam from downloading a 3rd/4th copy
