Right now, salt is just a trade good that doesn't get turned into anything. That's a shame because salt has been a crucial resource in preindustrial societies. It's necessary for food preservation, tanning hides for leather, it's used in silver refining, it's even used as an antiseptic.

Salt should be consumable. As a food, while it can't feed people on its own, maybe unit of salt can be consumed for every X units of total food to stretch food supplies, or preservation workshops (not historically accurate, next paragraph will propose a more realistic mechanic) could do something like take 1 unit of salt and 2 units of fish/meat to make 5 units of salted fish/meat.

Salt for food and hide preservation is usually applied as soon as possible. For example fish would come out of the sea, be gutted and deboned, and get packed in salt while still aboard the fishing boat. So maybe fish and meat producing villages, as well as towns when they slaughter livestock to make meat and leather, could consume salt to get a bonus to the meat and leather production.

These would add new ways to interact with / break the economy, which is always fun!
 
Salt should be important to prevent food from spoiling. Especially meat and fish. Should be something that is consumed when you have spoilable goods in your inventory otherwise the food will spoil and rot. So I agree with you!! Salt was worth its weight in gold. Even used as an currency due to how valuable it is.
