Game is too difficult

All was going well until I chose to start vaegir rebels faction because I already thought king yagrolek was a cheeky miser, I converted one boyar and got his castle and town then finally another boyar, they are both useless because their horses are so slow leading to them getting ganged up on by 5 nobles on the map each with 100+ party, I can't do anything against that.

I had to take a castle alone and overwhelmed only for it to instantly be attacked which I repelled yet every lord 9 times out of 10 will come after me get destroyed and yet still escape, as soon as I started the rebels one by one every other faction declared war on me despite my only having a negative affinity with the vaegirs after I betrayed them, yet now suddenly they all hate me, the same noble magically appears whenever I raid a village that isn't even his, I'm constantly getting ganged up on by 5 lords at a time...  I can't convert lords because they either hate me for no reason and I mean no reason I never did anything to half the kingdoms and their lords, they say they feel comfortable with my faction and praise my party yet never join me or they magically regain consciousness and escape battles that they start then when they come after me again they give me the big man talk when the cowards chose to sneak away.

So my gameplay experience now boils down to searching far and wide for a castle lightly defended only for a random guy from a different faction to the castle faction to come attack me while I'm building siege towers, raiding for food and loot only for the same guy to travel across the map and attack me while doing it and attempting to get my Lords to be useful besides always getting themselves captured and cowering in a castle.

The game has cheated because I didn't have negative approval with the other four factions yet one by one all declare war, this just makes my experience a exercise in frustration where I have to continually save after each successful raid or battle so I can go back and not have to spend hours gathering men and making money, but wait the only way I can get men is via cities which I have to sneak in because prisoners never join me and when they do they betray me or run away, can't recruit from villages, it's sad and unfair I did everything right and friendly kingdoms all declare war...

You're a new kingdom. It doesn't matter what factions think of you when you start your own, you're easy pickings, and everyone will do their best to exploit that. Continue holding them off, it will end eventually.

But I'm just trying to get the pretender king off his throne and all these annoying peasants come after me, it's been over 100+  in - game days.

Doesn't matter. You look weak to everyone else, and they want an easy fief.

They don't come after the two castles I have now they just raid the villages like 3 lords from each faction helping eachother do it.

Well I just converted a guy and I have one as a prisoner in my castle, so what you're saying is I should attack any weak Lords I see until I can take them prisoner? Also my faction is the only one at war with everyone else...

Not just weak lords. Fight every battle you can win. The wars won't stop until they get tired of their asses getting kicked.

That's called a target rich environment. Fight every lord you can beat, raid every caravan, and pillage a village or two owned by lords you have a particularly bad relationship with.

That's called a target rich environment. Fight every lord you can beat, raid every caravan, and pillage a village or two owned by lords you have a particularly bad relationship with.

But most of the time they travel in big packs or run from me until they reach a guy with 100+ then come after me.

The most in a party I have ever had was 70 something, I'm level 25 with 33 right to rule, 605 renown, - 45 honor, 100 controversy ?

70 can work, just use high quality soldiers. Right to rule could be higher, send companions to make yourself look legitimate according to the flow here.
Your low honor really isn't helping, complete more quests and do more honorable stuff, don't attack peasants going to and from villages. And your controversy is a consequence of the constant raids and such while you're marshal, that will go down when the fighting stops.

My honor is only low because of raids that I am forced to do plus everyone else raids so what about their honor?

Everyone raids, but not to the extent their honor is so negatively affected. don't raid until it's back up then, otherwise the only lords who will join your kingdom are weaklings and verified assholes that will be much more trouble than they're worth.

But I want to be the egomaniac, sociopath type dictator I don't want to be mr nice and have all the good two shoes lords, cabtI just eliminate them permanently?

The crap lords will betray you. They will start fights with other lords, making managing your kingdom a huge hassle by making everyone else angry, and will defect to someone else at the drop of a hat, taking their walled fiefs and any attached villages with them.
