I've just realised you only see noblemen in the enemy kingdom.
What about a count-given quest to escort a nobleman to some destination, ala merchant caravans? You have to defend against the usual bandits and deserters, but occasionally accepting such a quest will spawn enemy scouts, patrols and bounty hunters after you.
Also, the nobleman should be given a courser, not a saddle horse. it somehow seems more noble.
