Fief

Alright. When I first joined the Rhodoks, I was given a crappy fief that was just captured from the Khergits. I then promptly lost it.

Is it possible for me to renounce my allegiance to Graveth and then rejoin him immediately to get a fief? Or am I doomed to be landless until I capture a castle?

When you renounce your oath you loose relationship with your King. I myself have never tried this but he might not accept you back since his relatioship will be bad. But you could quest for him and get your relationship up and try that. It might work.

from what i understand, you ALWAYS get the worst little village as a fief when you join a faction. Thus, i suggest you go capture a castle for yourself anyway.

be happy, you just lost a crappy village, and get a fairly good chance to be awarded the next thing that is captured

Which I am. Except (This has happened about 4 times now) every damn time I get one it immediately is sieged by an army of 400-500.

Make sure you get either a castle or a town.  Then once you get it, make sure you stock it with as many troops as possible.  having 100-200 tier 2 troops should deter most attacks.

Well be happy that your king even awarded you a fief. When I was under allegiance to the Nords, I had captured roughly 5 territories (including two castles and a city) without them being given to me before I decided to rebel. Best choice I've ever made at that, let me tell you.

Nords gave me Rizi... not a bad town, located deep enough into Nord land that it stay's out of trouble and it's close to Tihr!

I've seiged two Rhodok castles and one Town, but so far I've only been given one castle from the king (came with it's village though). So now I have two villages and one castle.
